'Nduja is a traditional Calabrian cured meat, delicious, soft, and spreadable, made from premium cuts of Calabrian black pig meat and Calabrian red chili pepper, which gives it its distinctive spicy flavor. The meat and chili pepper are ground together, stuffed into large, smoked casings, creating a soft, generously sized sausage from which the spicy mixture is then extracted to taste.
