Trofie, one of the most loved and appreciated formats in Liguria, owe their name to the word "strofissià", which in Genoese dialect means to rub, from the movement of the hands necessary to produce them by hand. The home-made method, in fact, provides that small pieces of dough the size of beans are rubbed with the hands on the top of the cupboard or simply between the hands, until elongated spindles are obtained with the ends thinner than the center. Thanks to their tapered and intertwined shape, Trofie have a very particular texture that amuses the palate with every bite and perfectly retains the sauce, ideal for bringing simple and tasty dishes to the table. To better appreciate their flavor, Barilla recommends trying the Trofie with vegetable sauces and in particular with the elective recipe of the Ligurian culinary tradition: pesto, perhaps with the addition of potatoes and green beans for a timeless dish with an intense aroma and with a delicate flavor that will captivate you.
