Over nearly eight centuries, the abbey has survived wars, revolutions and epidemics, remaining faithful to its motto “Curvata resurgo” Even today, beer production reflects the monastic spirit, combining quality and authenticity while respecting ancestral values. The recent renovation of the brewery in 2020 bears witness to this constant commitment to excellence and sustainable development. The monastery was founded in 1230 and the first written records of the brewing tradition date back to 1595. At the time, the monks followed the Benedictine rule “Ora et Labora”: “Pray and work”. This rule established that their life was equally balanced between prayer and work, especially work done with their hands. The monks therefore devoted themselves mainly to agriculture and mining: they extracted various minerals, mainly lead and iron. Legend has it that the monks hoped to find gold-bearing material there. The hope was not entirely illusory, since by dint of digging the Tridaine River gushed from the side of the hill; according to experts, it is precisely its water that gives the beer its unique flavor. “Gold” was indeed there even if not in the usual form, awaiting the alchemical transformation process operated by the monks. 4 centuries of agriculture and exploitation of resources over the course of almost 4 centuries, agriculture and the exploitation of a marble quarry were the main resources available to the abbey. The most valuable blocks of marble from the Abbey can still be admired in St. Peter's Basilica in Rome and in the Castle of Versailles. Beer production was also part of the monks' work: it was simply consumed as “liquid bread” thanks to its nutritional properties. Since its foundation, the abbey has had to face many conflicts and calamities: the French Revolution, looting, fires, wars, epidemics… Despite these trials, the abbey has always faced them courageously and with perseverance. Its history is reflected in its motto, “Curvata resurgo”, which means “bent, I stand up straight”. This motto is accompanied by three powerful symbols: a rose that testifies to charity, a star that testifies to hope and a palm that testifies to faith.
