Mionetto was born in 1887 from the love and passion for the land and for the work in the cellar of the master winemaker Francesco Mionetto, founder of the family. Immersed in the hills of Valdobbiadene, cradle of Prosecco, Mionetto has been able to interpret its territory of origin over a century of history and become one of the most representative wine and Prosecco producing companies on the international scene. The total acquisition of the winery in 2008 by the German Group Henkell & CO. Sektkellerei KG (now Henkell Freixenet) based in Wiesbaden, one of the largest European producers of bubbles, has brought, according to a logic of management continuity linked to the territory of origin, further growth opportunities in terms of market both in the context and in international markets . From the first years of its foundation, Mionetto has been characterized both by its modern and innovative imprint and by its ability to anticipate fashions and trends while maintaining the close link with the culture of its native territory, which still distinguishes it today in the world of bubbles. In 1982, Mionetto introduced autoclave fermentation with the Charmat method, which allows for better preservation of the flavors and aromas of Prosecco. After an initial processing phase involving soft pressing and a first fermentation at a controlled temperature which takes place at selected suppliers, in the Charmat method the second fermentation takes place in an autoclave instead of in individual bottles. For Prosecco, this further fermentation at a controlled temperature is recommended to help maintain the freshness and typical aromas of the vine during the bottling phase. The work of the oenologists in Mionetto is therefore not only dedicated to the production of a high quality wine, but also to maintaining an effective collaboration with the local suppliers who have historically supplied the grapes for entire generations. It is in these historic relationships that Mionetto has been able to guarantee an excellent quality level of the grapes purchased and dedicated to the internal winemaking process.
